Production Starts

We are in production.  We received our first meat delivery on Oct 27, 2010.Photo0205

Most meat distributors here carry both Mexican and USA product, and we tried both as well as different suppliers and different products . For now we settled on Mexican meat, but we use different suppliers for beef and pork.  We use beef gooseneck rounds for our carne seca (jerky) and to generate trimmings for our snack sticks, and we use pork knuckles for the pork portion of our snack sticks.  Here we are grinding pork for some test batches.

Our consumer research (more about that in a upcoming post) told us what flavors were most preferred in this area of Mexico. Based on this information, we developed recipes and tested these recipes with focus groups. We made over 50 different test batches of product before we finalized our first five products. Initially, we have two product lines: palitos (sticks) and carne seca (jerky).  We have three flavors of palitos – Original, Sonorense, and Jalapeno.  Sonorense flavor has the flavors of Sonora and includes beans, cheese, and lots of chili.  We have two flavors of carne seca – Original and Picosita (spicy).  The Picosita flavor is very spicy and is seasoned with a blend of three types of very spicy chilies.  Here are the five products.

So far we are in 12 stores and adding more each week.  Here are our products on display at a gas station.IMG_1702
